Chicken Burrito Bowl

Make a chicken burrito bowl at home using this easy slow cooker recipe. With black beans, corn and rice; it makes a filling weeknight meal.

Ingredients

1 (14.5 ounce) can Redpack® Petite Diced Tomatoes Green Chilies
1 (15 ounce) can black beans, rinsed and drained
1 (14.5 ounce) can whole kernel corn, drained
1 (14.5 ounce) can chicken broth
Salt and black pepper to taste
3 green onions, thinly sliced
1 teaspoon garlic powder
1 teaspoon cumin
1 1/2 pounds chicken tenders
Hot cooked white rice
Garnish, Salsa any flavor, lime wedges, chopped cilantro and avocado slices

Directions

  • Combine petite diced tomatoes, black beans, corn, chicken broth, salt, black pepper, green onions, garlic powder and cumin in slow cooker. Season chicken with salt and lay on top.
  • Cook on LOW for 6-7 hours or on HIGH for 4 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir to combine.
  • Serve over rice and garnish with salsa, chopped cilantro, lime wedges and avocado slices.
  • Option: Add chopped romaine lettuce to make it more like a bowl.
