Texas Hash in Cups

This recipe has Texas-size flavor that comes in a handheld shell. Sausage and chorizo combine with our Diced Tomatoes along with veggies and pinto beans for a yummy hash that is tucked in little tortilla cups. These bites are great for dinner on the go, game parties, holiday gatherings or a yummy lunch. You can make the hash ahead and bake the cups when ready to eat.

Ingredients

1 tablespoon vegetable oil
1/2 pound mild pork sausage
1/2 pound chorizo
1 large onion, diced
3 (14.5 ounce) cans Redpack® Diced Tomatoes, undrained
3 tablespoons chili powder
3 large green bell peppers, 2 coarsely chopped, 1 finely chopped
1 tablespoon Worcestershire sauce
1 cup long grain white rice, uncooked
1 1/2 teaspoons salt
30 wonton wrappers, or 25 to 30 6 1/2 inch flour tortillas
1 (15 ounce) can pinto beans, rinsed and drained
2 cups shredded cheddar cheese
1 cup sour cream
2 avocados, sliced
1/4 cup fresh chopped cilantro, for garnish

Directions

  • Preheat oven to 350o F. Heat oil in a large stockpot over medium-high heat. Add in the sausage and chorizo and reduce heat to low. Crumble and stir sausage and chorizo while cooking over low heat until browned.
  • Add in onions and sauté until onions are just tender. Pour in the tomatoes and chili powder; stir well to combine. Add in green bell peppers, Worcestershire sauce, rice, and salt; blend well. Cover and cook on low for about 30 minutes or until rice is tender and most of the liquid has cooked off.
  • While hash is cooking, prepare tortillas by tucking 6 wonton wrappers at a time into the open area between muffin cups when the muffin pan is inverted. Bake for 5 to 8 minutes or until golden brown. Repeat for remaining wonton wrappers.
  • When hash is done, fold in the pinto beans and stir gently to combine. Heat through for few extra minutes. Remove from heat, remove the lid, and let rest for 5 minutes before serving.
  • Serve in the wonton wrappers by layering the hash, sour cream, Cheddar cheese. Lay an avocado slice in the center and sprinkle chopped cilantro over all.
  • Option: Serve in the tortillas cups, made like the wonton cups, with the hash tucked inside 2 sides of the cup, the sour cream in one side, and the Cheddar cheese in the other. Lay an avocado slice in the center and sprinkle chopped cilantro over all.
